Valentine’s chocolate mousse cake

Melt the chocolate over a saucepan of simmering water, add 2 tbls of double cream, stir until just melted, making sure not to overheat

4oz caster sugar
4oz butter
4oz plain chocolate
3 tablespoons of cocoa powder
3 eggs
Method
Melt the chocolate and butter together over a pan of hot water. Meanwhile whisk together the sugar, eggs and the cocoa powder with a hand whisk until it leaves a ribbon trail. Remove the chocolate mixture from the heat and stir into the egg mixture.
Pour into an 8in heart-shaped tin and bake in the oven at 170˚C for 10-15 minutes. When baked turn out to cool and ice with the chocolate and cream mixture. Decorate with red chocolate hearts and serve with love.
