1tsp fennel seeds200g plain flour25g unsalted butter100g caster sugar1tsp baking powder2 medium eggs

1. Grind half the fennel seeds in a pestle and mortar then add to the bowl of a food processor with the sugar, flour and baking powder. 2. Blitz briefly to combine then dice and add the butter and blitz again until it resembles fine breadcrumbs. 3. Add the eggs and process until the mixture forms a stiff dough. 4. Wrap the dough in cling film and refrigerate for half an hour.5. Pre-heat the oven to 180C/gas mark4. 6. On a floured surface roll out the biscuit dough to a 2-3mm thickness and cut into shapes with a fluted biscuit cutter. 7. Place the biscuits on non-stick baking trays, sprinkle with the remaining whole fennel seeds and bake for 5-10 minutes or until the edges of the biscuits are starting to turn a light golden brown. 8. Remove on to a wire rack and allow to cool.
