150g rhubarb200g caster sugar375ml waterSoda water or sparklingwaterIce
1. Roughly chop the rhubarb and place in a saucepan with the water and sugar and bring to the boil. 2. Reduce the heat and simmer for 10-15 minutes until the rhubarb is cooked to a soft pulp and taste for sweetness, adding more sugar if necessary.3. Pour through a fine sieve into a jug or large jar and allow to cool. 4. Refrigerate until cold then pour into glasses (filling up to a quarter of the glass), add a few ice cubes and top up with sparkling water or soda.
