8oz butter
8oz caster sugar
4 eggs
8oz self-raising flour

1/2 tsp baking powder
Grated zest of one large orange
2oz sultanas: soaked for one hour with one Earl Grey teabag and 2fl oz boiling water, drain, put aside
For icing:
1 tbsp icing sugar
Juice of one large orange
1 tbsp granulated sugar
Method
Preheat the oven to 180˚C. Cream together butter, sugar and orange zest until fluffy. Beat in the eggs, fold in half the flour. Add sultanas and baking powder to rest of the flour and fold into the mix. Pour mixture into a 2lb loaf tin lined with baking parchment and bake for 20 mins. Turn oven down to 170˚C for a further 20 mins, remove or bake for a further 5 mins if needed. Leave in tin to cool. Heat granulated sugar and half the orange juice in a pan over a low heat until dissolved. Prick the cake with a skewer to make holes and pour over syrup. Add remaining orange juice to icing sugar until a thin, pourable consistency. Remove cake from tin and pour over the mixture. Decorate with pared orange rind.
