Maypole cake recipe

Maypole cake  By Karen Thomas, The Enchanted Bakery, Tonbridge %01732 773313Cake12oz caster sugar12oz sunflower margarine                                            12oz self-raising flour, sifted                                6 eggs                     1 tbs cocoa powder Pink food colouring1/2 tsp vanilla essence3 x 7inch sponge cake tinsIcing4oz softened butter8oz icing sugar1 tbs cocoa powder1/2 tsp vanilla essence3 tbs of apricot jamMethod1 Cream together marg and sugar 2 Add eggs, gradually beating in3 Fold in flour and vanilla essence4 Divide mixture into three, add pink colouring to one mixture and cocoa powder to the last third  5 Bake in a moderate oven 170�C for about 20 mins until well risen 7 Beat together the butter, icing sugar and vanilla essence, divide icing into two bowls, add cocoa powder to second bowl, beat well 8 Layer the sponge cakes together, starting with the plain one, spread with apricot jam then buttercream9 Top with chocolate sponge and chocolate buttercream, then pink 10 Roll out a round of pale green fondant icing and place over cake11 Decorate with colourful ribbons
