grated zest and juice of 1 orange
Method
1 Cream the butter and sugar together until pale and fluffy.
2 Fold in the flour, juice, zest and ground rice and mix to make a stiff dough.
3 Place in small heaps on a floured baking sheet.
4 Bake at 180�C (350�F) mark 4 for 12-15 minutes, until golden brown.
5 Cool on a wire rack.
Store in an airtight container.
