Ingredients
8oz butter or margarine
6oz of dark brown sugar plus 2 tbps (to sprinkle)
2oz caster sugar

4 eggs
10oz self-raising flour
� tsp bicarbonate of soda
1 large cooking apple (peeled and sliced)
1 large or 2 small eating apples for decoration
2 tablespoons golden syrup
7x10in baking tin greased and lined with baking parchment
Method
Cream together both sugars and the margarine until light and fluffy.
Gradually beat in the eggs. Fold in sifted flour and bicarbonate of soda.
Put half the mixture in the prepared tin and layer on the sliced cooking apple.
Sprinkle over 2 tbps dark brown sugar.
Cover the apple with the rest of the mixture, arrange the sliced eating apples on top.
Spoon 2 tbps warmed golden syrup over the chopped eating apples.
Bake at 170c for 30-45 minutes, take out of oven when browned and risen.
