Gooseberry and Elderflower Jam
This one is a favourite of my dear friend Bridget, who might have a go at making it now the recipe is “out there”.
Ingredients
3lb gooseberries – washed, topped and tailed400ml water3lb granulated sugar200ml good quality elderflower cordial
Method
1 Place the prepared gooseberries in a copper pan (if possible) with the water.
2 When the gooseberries have softened, add the sugar and stir over a low heat until the sugar has completely dissolved.
3 Increase the heat and boil the mixture rapidly until setting point is reached (see right). The longer this mixture boils for, the redder it will become, so start checking for setting point early.
4 Once setting point is reached, add the elderflower cordial and bring back to boiling point. Bottle immediately into clean sterilised jars, lid and clearly label. Enjoy once the product is completely cold.
