Lemonade
Welcome the warmer weather with real, home-made lemonade – cloudy, still, and intensely citrus, nothing like the fizzy supermarket stuff.
• 4 large washed lemons• 100g (3�oz) granulated sugar• 2-4 tbsp honey (to taste)• 1 litre (1� pint) boiling water
Zest the lemons and then juice using a citrus press or squeezer to avoid the bitter pith. Strain the juice into a large bowl, adding the zest, sugar and honey. Pour in the boiling water and stir until the sugar is dissolved. Leave to cool, preferably overnight. Check sweetness and adjust if necessary. Decant into large jug and serve over ice and a slice of lemon or lime.
