Kent Lent Pie Recipe
Kent School dinner recipes
Sometimes called Kentish Pudding Pie, this is rather like a baked cheesecake and was particularly popular in the Folkestone area.
Serves 4-6
Ingredients
150g short crust pasty
125g margarine
125g castor sugar
2 eggs, beaten
125g ground rice
75g currants
juice from half a lemon
Method
1 Line a flan tin with the pastry, prick with a fork and bake blind.
2 Cream together the margarine and castor until light and fluffy.
3 Slowly add the beaten eggs and continue to beat the mixture well.
4 Add the lemon juice.
5 Mix in the ground rice and currants.
6 Spread evenly onto the pastry case.
7 Bake in a moderate oven for 30-40 minutes or until a light golden colour.
