Spiced Sweet Potato Slices(Serves 4)Ingredients2 large pink sweet potatoes, peeled and left whole30ml/2 tbsp olive oil2.5ml/½tsp ground coriander2.5ml/½tsp ground cumin1ml/¼tsp ground cardamom seedsSea salt to tasteMethod Parboil the sweet potatoes for about 10 minutes, until just tender. Allow to cool slightly and cut into 6mm/¼" slices, lengthways.
