Walnut
The Walnut Ethos...
WALNUT has a new menu and it's going to be ever-changing and adaptive of the fresh, seasonal produce available to us.
We prioritise:
- British produce
- High, quality properly nurtured ingredients Our suppliers are:
- Good practice farmers (most from the UK, organic where appropriate)
- Farmers markets
- We have an on-going commitment to discover and foster new relationships with smaller British suppliers
Some constants remain:
- There will always be British steaks on the menu
- Fresh sustainable fish (you won't find endangered fish on our menu)
- Imaginative and unusual vegetarian dishes
- Game specials such as grouse, pheasant and venison as well as more unusual dishes such as sweet breads and pig cheeks. We explore underused ingredients and the potential of every part of the animal
- Our wines come from suppliers with good practice principles, some are organic and all have been consolidated and shipped to the UK
- Our bread is made in-house from organic Suffolk flour specially milled for us
- All our fish and meat is smoked inhouse (either in the restaurant or our garden in NW2)
- Our coffee is 100% Arabica coffee, fair trade and organic
- We use plant-based cleaning products.
We minimise waste and recycle as much as we can including waste oil and fats which are used for bio-diesel.
We use energy saving devices and are constantly reviewing our energy use.
Our staff cycle, walk or use public transport to get to work and believe in what we are doing.
We are working hard to find the best local ingredients for our dishes.
We want the results to be better than ever.
Walnut is an independent restaurant, a family business and a leader in restaurant sustainability.
